Your Muffin Tin Is a Dinner Machine in Disguise
Saturday is for appliance hacks, and today's hero is a humble 12-cup muffin tin. It portions food perfectly, cooks fast because everything is small, and gives you more crispy edges per bite than any casserole dish ever could. Bonus: cleanup is one pan, and leftovers freeze like champs.
If you've only ever used it for blueberry muffins, your tin has been underemployed. Let's give it a promotion.
The One Trick That Makes It Work: Grease Like You Mean It
Sticking is the only real enemy here. Brush every cup (including the top rim) with oil or spray it generously with nonstick spray, even if your tin is labeled nonstick. Then let finished items rest in the tin for 3 to 5 minutes before popping them out with a butter knife. That short rest lets everything set so your dinners hold their shape instead of collapsing into sad piles.
Also, always place the tin on a rimmed baking sheet. It catches drips and makes the hot tin easier to move.
Five Dinners, One Muffin Tin
1. Mini Meatloaves. Mix 1 pound ground beef, 1/2 cup breadcrumbs, 1 egg, 1/4 cup ketchup, 1 teaspoon salt, and 1/2 teaspoon pepper. Divide among 10 to 12 cups, top each with a spoonful of ketchup, and bake at 375°F for 20 to 25 minutes, until they reach 160°F inside.
2. Egg and Veggie Cups. Whisk 8 eggs with 1/4 cup milk, salt, and pepper. Fill greased cups with chopped spinach, peppers, and shredded cheese, pour in the egg mixture to about three-quarters full, and bake at 350°F for 18 to 20 minutes. Serve with a salad and toast for a breakfast-for-dinner win.
3. Taco Cups. Press small flour tortillas into the cups, fill with 1 pound cooked taco-seasoned beef and a little shredded cheese, and bake at 375°F for 12 to 15 minutes. Top with salsa, lettuce, and sour cream.
4. Mac and Cheese Bites. Stir 3 cups cooked, cooled mac and cheese with 1 beaten egg and 1/2 cup extra shredded cheese. Pack into cups, sprinkle with breadcrumbs, and bake at 400°F for 15 to 18 minutes until golden. Pair with steamed broccoli.
5. Pizza Cups. Cut refrigerated biscuit dough (8-count can) in half, press each piece into a cup, add a teaspoon of marinara, a few mini pepperoni, and mozzarella. Bake at 375°F for 12 to 15 minutes.
