Trader Joe's frozen falafel gets treated like a one-trick pony: thaw it, stuff it in pita, done. But that bag of little golden orbs is doing way more heavy lifting than you're giving it credit for. Don't microwave it. Ever. The bag says you can, and technically you can, but microwaved falafel goes from crispy little nugget to sad hummus pebble in about 45 seconds. Bake at 400°F for 12-14 minutes or air fry at 375°F for 8 minutes instead — that's the difference between "exterior crunch" and "interior mush," and it's the whole ballgame here.
Five Dinners From One Bag
1. Falafel grain bowls. Crisp the falafel, then pile it over rice or couscous with cucumber, tomato, and a big spoonful of tahini sauce thinned with lemon juice and water.
2. Falafel tacos. Crumble baked falafel into warm corn tortillas with shredded cabbage, pickled red onion, and a drizzle of yogurt sauce. Weirdly great, don't overthink it.
3. Falafel pasta. Toss crumbled falafel with orzo, cherry tomatoes, olive oil, and feta for a Mediterranean pasta salad that works hot or cold.
4. Falafel sliders. Smash two or three falafel balls flat, toast them on a skillet for 2 minutes a side to reheat and re-crisp, then stack on slider buns with lettuce, tomato, and garlic mayo.
5. Falafel soup topper. Crumble crispy falafel over a bowl of lentil or tomato soup instead of croutons. Sounds odd, tastes incredible, adds actual protein to your soup night.
