The Pantry Can That Quietly Does the Most
Canned lentils are the overachiever of the pantry. They're cooked, cheap (usually $1 to $1.50 a can), packed with protein and fiber, and they don't need an hour of simmering like the dry kind. Open, rinse, dinner. That's the whole pitch.
They're also a blank canvas. Lentils soak up whatever you throw at them, which means one can can show up on your table five nights running without anyone noticing a repeat.
The One Step That Makes It Work: Rinse and Season
Canned lentils straight from the can can taste a little tinny and flat. Drain them in a fine-mesh strainer and rinse under cold water for about 30 seconds. Then season boldly, because lentils are polite and need a push: salt, acid (lemon juice or vinegar), and something savory like garlic or cumin. Never skip the acid. It's the difference between mushy and magnificent.
Five Dinners From One Can
1. Skillet Lentil Tacos. Heat 1 tablespoon oil in a skillet over medium heat. Add one drained 15-ounce can of lentils, 2 teaspoons taco seasoning, and 3 tablespoons water. Cook 6 to 8 minutes, mashing a few with a spoon. Pile into tortillas with cheese, salsa, and shredded lettuce.
2. Lemony Lentil Salad. Toss one rinsed can with 1 diced cucumber, a handful of cherry tomatoes, 2 tablespoons olive oil, the juice of half a lemon, salt, and pepper. Crumble feta on top. Ready in 10 minutes, and it's better after sitting in the fridge.
3. Ten-Minute Lentil Soup. Sauté 1/2 diced onion and 1 minced garlic clove in olive oil for 4 minutes. Add the lentils, 2 cups broth, 1/2 teaspoon cumin, and a handful of spinach. Simmer 10 minutes, then finish with a splash of red wine vinegar.
4. Lentil Sloppy Joes. Simmer the lentils with 1 cup tomato sauce, 1 tablespoon brown sugar, 1 tablespoon mustard, and 1 teaspoon Worcestershire for 10 minutes. Spoon onto toasted buns. Messy, saucy, and nobody asks where the beef went.
5. Lentil-Stuffed Sweet Potatoes. Microwave 2 sweet potatoes for 8 to 10 minutes until tender. Warm the lentils with a pinch of smoked paprika and a spoonful of tomato paste. Split the potatoes, stuff, and top with Greek yogurt and chopped herbs.
