One Bag, Five Dinners, Zero Meal-Prep Guilt
It's Monday, which means your motivation is at its lowest and your fridge is giving 'sad desk salad' energy. Enter the humble bag of Good & Gather frozen meatballs from Target. They're fully cooked, they're cheap, and they don't care how tired you are.
The trick is to stop thinking of them as 'spaghetti night' and start thinking of them as a protein you can steer in five directions. One bag, a few pantry staples, and you've got a whole week of dinners that don't feel like repeats.
The Prep That Makes It Work
Don't thaw the whole bag on the counter. Pull out only what you need for each meal and keep the rest frozen. Frozen meatballs reheat best gently: simmer them in sauce for 12 to 15 minutes, or bake at 400°F for 18 to 22 minutes on a sheet pan until hot in the center (165°F). Rushing them on high heat gives you rubbery outsides and icy middles, and nobody wants that.
Check the package for the count. Most bags hold roughly 24 meatballs, so plan about 5 per meal for two to three people, and you'll stretch the bag across the week.
Five Dinners From One Bag
1. Meatball Subs. Simmer 5 meatballs in 1 cup marinara for 12 minutes. Pile onto toasted hoagie rolls, top with provolone, and broil for 2 minutes until bubbly.
2. Sheet Pan Meatballs and Veggies. Toss 5 meatballs with broccoli florets and a tablespoon of olive oil. Roast at 400°F for 20 minutes. Finish with a squeeze of lemon.
3. Meatball Fried Rice. Quarter 5 thawed meatballs and sauté them with a cup of cooked rice, a handful of frozen peas and carrots, a scrambled egg, and 2 tablespoons of soy sauce for about 8 minutes.
4. Creamy Meatball Stroganoff-ish Skillet. Brown sliced mushrooms in a skillet, add 5 meatballs, 1 cup beef broth, and simmer 10 minutes. Stir in 1/2 cup sour cream and serve over egg noodles.
5. Meatball Soup. Bring 4 cups chicken broth to a simmer with a diced carrot, a diced celery stalk, and a handful of small pasta. Add 5 meatballs and a few handfuls of spinach. Simmer 12 minutes until the pasta is tender.
