The Golden Rules of Dump Dinners

Before you start throwing things in a pot, a few quick rules that make the difference between a great dump dinner and a watery disappointment:

  • Layer liquids on the bottom. Broth, sauce, or canned tomatoes go in first to prevent burning.
  • Harder vegetables go in first. Potatoes, carrots, and onions on the bottom; softer vegetables added in the last hour.
  • Don’t overfill. Fill your slow cooker no more than two-thirds full for even cooking.
  • Resist the urge to lift the lid. Every peek adds 20–30 minutes to cook time.

Dump Dinner 1: Chicken Tortilla Soup

Why it works: Everything goes in raw — even the chicken. It shreds itself.

What you need:

  • 2 boneless chicken breasts
  • 1 can black beans (drained)
  • 1 can corn (drained)
  • 1 can diced tomatoes
  • 1 can green chiles
  • 2 cups chicken broth
  • 1 packet taco seasoning

The move: Dump everything in. Cook on low 6–8 hours or high 3–4 hours. Shred the chicken directly in the pot with two forks. Top with crushed tortilla chips, sour cream, and shredded cheese.


Dump Dinner 2: Honey Garlic Pork Tenderloin

Why it works: Pork tenderloin is practically made for the slow cooker — it comes out fork-tender every time.

What you need:

  • 1–1.5 lb pork tenderloin
  • ¼ cup soy sauce
  • ¼ cup honey
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper

The move: Whisk sauce ingredients together, pour over pork in the slow cooker. Cook on low 4–5 hours. Slice and serve over rice with the pan juices spooned on top.


Dump Dinner 3: Beef and Potato Stew

Why it works: Cheap stew beef becomes melt-in-your-mouth tender after a full day in the slow cooker.

What you need:

  • 1.5 lbs stew beef, cut into chunks
  • 3 medium potatoes, cubed
  • 2 carrots, sliced
  • 1 onion, diced
  • 2 cups beef broth
  • 1 can cream of mushroom soup
  • Salt, pepper, garlic powder, dried thyme

Dump Dinner 4: White Bean and Sausage Stew

Dump Dinner 5: Salsa Chicken Rice Bowls

Why it works: Three ingredients. Seriously.

What you need:

  • 2 lbs boneless chicken thighs
  • 1 jar (16 oz) of your favorite salsa
  • 1 packet taco seasoning
