Ingredients
1 pound shrimp, peeled and deveined
2 cups water
1 cup stone-ground grits
2 cups milk
½ teaspoon salt
¼ teaspoon black pepper
2 cups sharp cheddar cheese, shredded
4 tablespoons butter, divided
1 medium onion, chopped
2 cloves garlic, minced
1 tablespoon hot sauce
½ teaspoon paprika
Directions
1.
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
2.
In a large saucepan, bring 2 cups of water and 2 cups of milk to a boil over medium heat.
3.
Gradually whisk in the stone-ground grits and reduce the heat to low. Cook, stirring often until thickened.
4.
Stir in salt, black pepper, and 1 cup of the cheddar cheese until melted and combined evenly.
5.
In a skillet, melt 2 tablespoons of butter over medium heat. Add chopped onion and cook until translucent.
6.
Add minced garlic to the skillet and sauté for about 1-2 minutes until fragrant but not browned.
7.
Stir the cooked onion and garlic into the grits mixture, then transfer everything to the prepared baking dish.
8.
In the same skillet, melt the remaining 2 tablespoons of butter and add the shrimp. Cook until they turn pink.
9.
Season the shrimp with hot sauce and paprika, then arrange them over the grits in the baking dish.
10.
Top with the remaining cup of cheddar cheese, spreading it evenly across the surface of the casserole.
11.
Bake in the preheated oven until the casserole is bubbly and the top is golden for about 30 minutes.
12.
Allow the casserole to cool slightly before serving to help it set and make cutting easier.
