There’s something wonderful about taking two beloved classics and mashing them together into a new favorite, and these Reuben Quesadillas do exactly that. All the deli-counter flavor of a classic Reuben sandwich, but pressed into a crispy, golden tortilla for a fun twist on a familiar favorite.

I started making these on nights when I wanted Reuben flavors without committing to a full sandwich situation. Swapping rye bread for a tortilla changes the texture in the best way, giving you a crispy, buttery exterior that holds all that classic corned beef, sauerkraut, and Swiss cheese filling together perfectly. One batch, and this became my new favorite way to enjoy a Reuben.

What I love most about this recipe is how the melted Swiss cheese and tangy sauerkraut balance the richness of the corned beef, while the buttered tortilla crisps up just like a proper grilled sandwich. It’s comfort food with a playful twist.

The Inspiration Behind This Recipe

This recipe came from wanting to reimagine a deli classic in a format that’s a little easier to make at home and even easier to share. The Reuben sandwich has such a well-loved flavor combination—salty corned beef, tangy sauerkraut, nutty Swiss, and creamy Thousand Island dressing—that it felt like a natural fit for the quesadilla format.

Swapping the traditional rye bread for tortillas also makes this version quicker to prepare, since there’s no need to butter and grill individual slices of bread. The result keeps everything that makes a Reuben great while making it easier to slice, share, and dip.

This has become one of those recipes that surprises people with how well the flavors translate into a completely different format.

Why This Cooking Method Works

Layering the Swiss cheese directly against the tortilla, with the corned beef and sauerkraut in the middle, helps the cheese melt and act as a bit of a glue, holding the filling together as the quesadilla cooks. Buttering the outside of the tortillas, rather than using oil in the pan, mimics the classic grilled-sandwich technique and helps achieve that same golden, crispy exterior.

Cooking over medium heat allows the outside to crisp up gradually while giving the cheese enough time to fully melt and the corned beef enough time to warm through. Flipping carefully halfway through ensures both sides get evenly golden without the filling spilling out.

Letting the quesadilla rest for a minute before slicing helps the cheese set slightly, making for cleaner wedges when it’s time to serve.

Flavor Profile: What to Expect

This dish delivers a rich, tangy, and savory flavor profile:

Salty, savory richness from corned beef

Nutty, melty depth from Swiss cheese

Tangy brightness from sauerkraut

Creamy, slightly sweet contrast from Thousand Island dressing

Buttery, crispy exterior from the pan-toasted tortilla

The result is a quesadilla that’s rich and tangy in all the right ways, with a satisfying crunch on the outside.

Tips for Making the Best Reuben Quesadillas

A few small details make a big difference here:

Drain the sauerkraut well: Excess moisture can make the quesadilla soggy, so pat it dry before layering.

Don’t overfill: A moderate amount of filling makes flipping easier and prevents spilling.

Use medium heat: This gives the cheese time to melt fully while the tortilla crisps evenly.

Let it rest before slicing: This helps the filling set for cleaner wedges.

Serve with extra dressing on the side: This keeps the quesadilla from getting soggy while still giving you that classic Reuben flavor in every bite.

If you want an extra crispy exterior, pressing down gently with a spatula while cooking helps create more even contact with the pan.

Serving Suggestions and Side Pairings

These quesadillas are satisfying enough to serve as a meal, but a few additions round things out nicely:

Extra Thousand Island dressing for dipping

A simple side of kettle chips or potato chips

A light side salad with a tangy vinaigrette

Pickles or pickle spears for a classic deli touch

They also make a fun addition to a game day spread alongside other handheld appetizers.

Storage, Reheating, and Make-Ahead Tips

These quesadillas are best enjoyed fresh, but leftovers can still be salvaged with a little care.

Refrigerate in an airtight container for up to 3 days.

Reheat in a skillet over low heat to help restore some of the crispy exterior, rather than using a microwave.

Freezing is not recommended, as the texture of the tortilla and sauerkraut can suffer once thawed.

You can prep the corned beef and drain the sauerkraut a day in advance, so all that’s left is assembling and cooking when you’re ready to eat.

Why This Recipe Deserves a Spot in Your Rotation

This is a dish that proves a classic can be reinvented without losing what made it great in the first place. It’s quick, fun, and packed with all the flavor of a traditional Reuben, making it a great choice for a casual dinner or a shareable snack. Once you’ve made a batch, it’s easy to see why this becomes a repeat request.

Recommended Drink Pairing

The tangy, savory flavors of this dish pair well with a crisp lager or pale ale, which helps cut through the richness of the corned beef and cheese. An Irish Coffee is another fun option if you want to lean into the deli-classic vibe with something a little different.

For a non-alcoholic option, a sparkling water with a splash of lemon or a classic cream soda rounds out the meal nicely.
