There’s a reason fajitas have their own holiday.

Few dishes bring the theater of dinner quite like a sizzling skillet hitting the table, peppers and onions still popping, tortillas warm and ready to be filled. It’s interactive, it’s customizable, and it’s been a Tex-Mex staple for decades. On August 18, that dish finally gets its due.

National Fajita Day traces back to 2016, when On The Border Mexican Grill & Cantina first pushed for the celebration. Since then, other Tex-Mex chains have picked up the torch, and the holiday has grown into an unofficial excuse for restaurants — and home cooks — to go all in on grilled meat, peppers, and onions.

The fajita itself has roots that go back much further, to Texas ranch hands in the 1930s who grilled tougher, less desirable cuts of beef over an open flame and wrapped the results in tortillas. What started as a practical meal turned into one of the most recognizable dishes in American Mexican food.

What to Expect Today

Tex-Mex chains have a history of running fajita specials around this date, and it’s worth calling ahead to your favorite spot or checking their app before you go. In past years, brands like On The Border, Chili’s, and Chevys Fresh Mex have offered discounted platters or combo deals, though offers vary by location and year, so don’t assume a national promotion is guaranteed.

Grocery stores tend to join in too, often marking down items like tortillas, bell peppers, onions, and marinades — useful if you’d rather skip the wait and cook at home.
