Ingredients

1 ½ cups graham cracker crumbs

½ cups unsalted butter

¼ cups granulated sugar

4 large egg yolks

1 can sweetened condensed milk

¾ cups key lime juice

1 tablespoon lime zest


Directions

1.

Preheat your oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper, leaving an overhang on the sides to lift the bars out easily when cooled.

2.

In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until the mixture resembles wet sand.

3.

Press the graham cracker mixture firmly into the bottom of the prepared baking dish, creating an even layer, and bake for 10 minutes until lightly golden.

4.

While the crust is baking, prepare the filling by whisking together the egg yolks, sweetened condensed milk, key lime juice, and lime zest in a large bowl until smooth and well combined.

5.

Once the crust has finished baking, pour the lime mixture over it, spreading evenly with a spatula, and bake for an additional 15 minutes.

6.

Remove from the oven and let the bars cool to room temperature before refrigerating them for at least 2 hours or until fully set.

7.

Once chilled, use the parchment paper overhang to lift the bars out of the dish, slice into squares, and serve chilled.
