The concept is simple — a smashed beef patty cooked directly onto a flour tortilla, which crisps up on the bottom and absorbs all the beef fat as it cooks. The result is a handheld, foldable, crispy-edged thing that combines the best parts of a smash burger and a street taco into one. Here’s how to make it.

What You Need

You don’t need a griddle or a cast iron press. A heavy skillet — stainless or cast iron — and a flat-bottomed spatula are all it takes. The key is getting the pan genuinely hot before anything goes in.

The Method

Step 1: Ball up your beef Use 80/20 ground beef — the fat content is what gives you the crispy edges. Portion it into roughly 2-ounce balls. Don’t season yet.

Step 2: Heat your pan Get your skillet over medium-high heat until it’s very hot. No oil needed — the beef will release enough fat on its own.

Step 3: Place the tortilla, then the beef Lay a small flour tortilla in the hot pan. Immediately place a ball of beef in the center of the tortilla. Using your spatula — or the bottom of a small saucepan — press the beef down hard and flat directly onto the tortilla. Season the top with salt, pepper, and garlic powder.

Step 4: Cook and flip Let it cook for about 2 minutes until the edges are brown and crispy. Flip the whole thing — tortilla and beef together — in one move. Add a slice of American cheese immediately so it melts while the tortilla crisps on top.

Step 5: Load it up and fold Slide it out of the pan, add your toppings, and fold it in half like a taco. Done.
