Birria tacos earned their viral moment the hard way — by being genuinely, undeniably delicious. Slow-braised beef pulled apart and stuffed into corn tortillas that have been dipped in the braising liquid and crisped in a hot pan until the cheese melts and the exterior turns golden and crackling. Then you dip the whole thing back into the consommé before every bite. It’s a full sensory experience, and it’s one of the rare food trends that rewards the effort completely. Here’s how to make it at home.

Understanding the Components

Birria has three parts that work together: the braised meat, the consommé, and the assembled tacos. The braise does most of the work — once the beef is in the pot, it’s largely hands-off. The consommé is just the strained braising liquid, which is already made by the time the meat is done. The tacos themselves come together in minutes. The timeline is long but the active work is short.

The Full Version (Worth It on a Weekend)

The Chile Sauce Toast three dried guajillo chiles, two dried ancho chiles, and one chipotle in adobo in a dry pan for about 30 seconds per side until fragrant. Remove stems and seeds. Soak in hot water for 15 minutes until softened. Blend with one cup of soaking water, four cloves of garlic, half a white onion, one teaspoon each of cumin and oregano, and a pinch of cloves until completely smooth.

The Braise Season three pounds of chuck roast generously with salt and pepper. Sear in a Dutch oven or heavy pot until deeply browned on all sides. Pour the chile sauce over the meat along with two cups of beef broth. Add a bay leaf and a cinnamon stick. Cover and braise at 325°F for 3 to 3.5 hours until the beef is completely fall-apart tender. Remove the meat, shred it, and strain the remaining liquid — that’s your consommé. Season it with salt and keep it warm.

The Tacos Dip corn tortillas into the top layer of the consommé — where the fat floats — and lay them in a hot skillet. Add shredded beef and a generous handful of shredded Oaxacan cheese or mozzarella to one half. Fold and cook until the exterior is crispy and the cheese is fully melted, about 2–3 minutes per side. Serve immediately with a small bowl of warm consommé for dipping, diced white onion, fresh cilantro, and lime wedges.

The Weeknight Shortcut

No time for a three-hour braise? Use a pressure cooker or Instant Pot. Follow the same chile sauce and searing steps, then cook on high pressure for 60 minutes with a 15-minute natural release. The beef comes out just as tender in a fraction of the time. Alternatively, assemble the braise in a slow cooker before work — low for 8 hours — and come home to birria that’s been doing the work all day.

Tips for Getting It Right

  • Use corn tortillas, not flour — they hold up to the consommé dip and crisping process better and are more traditional.
  • Oaxacan cheese is the authentic choice and melts beautifully. Mozzarella is a widely available substitute that works well.
  • The consommé dip is not optional. It’s what gives the tortilla its color, flavor, and crunch. Don’t skip it.
  • Make more than you think you need. Leftover birria reheats exceptionally well and the consommé freezes perfectly for next time.
