Ingredients

1 ½ pounds ground beef

1 cup breadcrumbs

1 large egg

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

3 cups beef broth

2 large onions, thinly sliced

2 tablespoons butter

4 slices Swiss cheese

1 cup croutons

1 tablespoon Worcestershire sauce


Directions

1.

In a bowl, combine ground beef, breadcrumbs, egg, salt, and black pepper. Mix until ingredients are well combined.

2.

Shape the mixture into 1-inch meatballs using your hands and set them aside on a plate for a few minutes.

3.

Heat olive oil in a large skillet over medium heat and brown the meatballs on all sides. Do this in batches if necessary.

4.

Add butter to the crockpot and layer sliced onions on the bottom. Place the browned meatballs on top of the onions.

5.

Pour beef broth and Worcestershire sauce over the meatballs and onions and stir gently to combine the sauces.

6.

Cover the crockpot and cook on low for 4 to 5 hours, or until the meatballs are thoroughly cooked and flavors meld.

7.

During the last 15 minutes of cooking, top the meatballs with Swiss cheese slices and cover until cheese melts.

8.

Serve the meatballs hot, with a generous topping of croutons for added texture and flavor, if desired.
