Ingredients

1 cup warm water

2 ¼ teaspoons active dry yeast

1 tablespoon granulated sugar

2 ½ cups all-purpose flour

½ teaspoon salt

4 tablespoons unsalted butter

½ cup baking soda

6 cups water

½ cup granulated sugar

1 teaspoon ground cinnamon

Directions

1.

In a large bowl, combine warm water, yeast, and sugar until dissolved and let sit for 5 minutes until foamy.

2.

Add in the flour and salt to the yeast mixture and mix well until dough is formed and starts pulling away.

3.

Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic consistency is achieved.

4.

Place the dough in a lightly oiled bowl, cover, and allow it to rise in a warm place for about 30 minutes.

5.

Preheat the oven to 450 degrees Fahrenheit and line a baking sheet with parchment paper for the pretzels.

6.

Meanwhile, bring 6 cups of water and baking soda to a boil in a large pot over medium-high heat.

7.

Once the dough has risen, divide it into 8 equal pieces and roll each into a long rope, shaping into pretzels.

8.

Gently drop each pretzel into the boiling soda water for about 30 seconds, then place on the prepared sheet.

9.

Bake the pretzels in the preheated oven for 12 to 15 minutes until golden brown, then remove from oven.

10.

Melt the butter and brush it generously over the baked pretzels while they're still warm.

11.

Mix together 0.5 cup sugar and cinnamon in a shallow dish and dip each buttered pretzel in the mixture.
