The Pantry Can That Quietly Does the Most
It's Sunday, which means Ingredient Anchor day, and today's star is the canned chicken. Yes, the one hiding behind the tuna. It's already cooked, shelf-stable for ages, and costs roughly $2 to $3 a can. That makes it a legitimate dinner shortcut, no thawing, no poaching, no raw-chicken cutting board drama.
Think of it as rotisserie chicken's low-maintenance cousin. It lives in your pantry, never judges you, and shows up when the fridge is bare.
The One Step That Makes It Work
Drain it well. Really well. Tip the can into a fine-mesh strainer, press the chicken gently with a fork to squeeze out the liquid, then flake it into bite-size shreds. Taste a piece. If it seems a bit plain, that's normal; a pinch of salt, a squeeze of lemon, or a splash of hot sauce wakes it right up. Skipping the draining step is how you end up with soggy everything.
Five Dinners From One Can (Or Two)
1. Buffalo Chicken Quesadillas. Toss one drained 12.5-ounce can with 2 tablespoons hot sauce and 2 tablespoons ranch or cream cheese. Spread over a flour tortilla with a handful of shredded cheese, fold, and cook in a dry skillet over medium heat for 2 to 3 minutes per side until crisp and melty.
2. Creamy Chicken Salad Sandwiches. Mix the flaked chicken with 3 tablespoons mayo, 1 tablespoon Dijon, a diced celery stalk, and black pepper. Pile onto toasted bread with lettuce. Done in 5 minutes, no stove required.
3. Chicken Fried Rice. Heat 1 tablespoon oil in a large skillet over medium-high heat. Scramble 2 eggs, then add 2 cups cold cooked rice, 1 cup frozen peas and carrots, and the chicken. Stir in 2 tablespoons soy sauce and cook 4 to 5 minutes until the rice starts to crisp.
4. Chicken Noodle Soup, Fast. Simmer 4 cups chicken broth with a diced carrot and celery stalk for 10 minutes. Add 2 cups egg noodles and cook 5 to 6 minutes, then stir in the chicken and heat through for 1 minute. Season with pepper and a little dried thyme.
5. Chicken Taquitos or Stuffed Sweet Potatoes. For taquitos, mix the chicken with 1/2 cup salsa and 1/2 cup shredded cheese, roll into 8 small tortillas, and bake seam-side down at 425°F for 15 to 18 minutes, until golden. Prefer cozy? Microwave 2 sweet potatoes for 8 to 10 minutes, split, and stuff with the same filling.
