Why Canned Beets Deserve a Second Look
Wednesday means Ingredient Anchor, and today's pantry staple is the one that gets side-eyed the most: canned beets. They're already cooked, already tender, usually under $2 a can, and they last for years. No scrubbing, no roasting for an hour, no purple hands up to your elbows (okay, a little purple, but only a little).
Beets are sweet, earthy, and a little bit fancy-looking on a plate. Pair them with something tangy, salty, or crunchy and they stop tasting like a school cafeteria memory and start tasting like a bistro side. One can can anchor five very different dinners.
The One Prep Step That Makes It Work
Drain the can, rinse the beets under cold water, then pat them dry with a paper towel. That canning liquid is what gives beets their muddy, metallic flavor, and wet beets will steam instead of brown. Dry beets take on a glaze, a sear, or a dressing far better. Reserve a splash of the liquid only if a recipe below asks for it, since it's great for tinting things pink.
Five Dinners From One Can
1. Beet and Goat Cheese Grain Bowl. Slice one 15-ounce can of beets into wedges. Toss with 1 tablespoon olive oil, 1 teaspoon balsamic vinegar, and a pinch of salt. Pile over 2 cups of cooked rice or quinoa with a handful of arugula and 2 ounces of crumbled goat cheese. Top with chopped walnuts. Ready in 10 minutes.
2. Pan-Seared Beets With Eggs. Dice the beets and cook in 1 tablespoon of oil over medium-high heat for 6 to 8 minutes until the edges crisp. Add a diced potato leftover if you have one, then top with two fried eggs. It's a hash with a very good outfit.
3. Quick Beet Hummus Flatbread. Blend the beets with one can of drained chickpeas, 2 tablespoons tahini, the juice of half a lemon, 1 garlic clove, and a pinch of salt until smooth. Spread on warm naan or pita, then top with cucumber, feta, and a drizzle of olive oil. Shocking pink, shockingly good.
4. Beet Pasta With Cream Cheese. Blend the beets with 4 ounces of cream cheese, 1/4 cup pasta water, 1 garlic clove, and salt. Toss with 8 ounces of cooked pasta over low heat for 2 minutes. Finish with black pepper and lemon zest. Yes, the sauce is magenta. Embrace it.
5. Beet and Apple Slaw Tacos. Julienne or finely chop the beets with one crisp apple. Mix with 2 tablespoons Greek yogurt, 1 tablespoon lime juice, and a pinch of salt. Spoon into warm tortillas with crumbled queso fresco and cilantro. Crunchy, tangy, and ready in 10 minutes.
