Why This $3 Bag Deserves a Spot in Your Cart
It's Monday, which means it's Retailer Spotlight time, and today we're heading to Trader Joe's freezer aisle. Specifically: the bag of Cauliflower Gnocchi that has quietly become a cult favorite. It costs about $3 to $4, cooks in minutes, and soaks up whatever flavors you throw at it. Think of it as a blank canvas that happens to be shaped like little pillows.
The best part? One bag is a base, not a one-night stand. Buy two or three and you've got a week of dinners with almost no planning. (Prices and stock vary by store, so check yours.)
The One Trick That Makes It Work
Do not boil it. Skip the pot entirely and cook the gnocchi straight from frozen in a skillet. Heat 1 to 2 tablespoons of olive oil over medium-high heat, add the frozen gnocchi in a single layer, and cook 4 to 5 minutes without stirring. Flip and cook another 3 to 4 minutes until golden and crisp at the edges. Crowding the pan steams them into mush, so work in batches if you're cooking more than one bag.
Five Dinners, One Bag
1. Pesto Chicken Gnocchi. Crisp the gnocchi, then toss with 2 to 3 tablespoons of jarred basil pesto and a cup of chopped cooked chicken. Finish with halved cherry tomatoes and parmesan.
2. Sausage and Kale Skillet. Brown 8 ounces of sliced pre-cooked sausage in the pan, add 2 cups of chopped kale and a splash of broth, then fold in the crisped gnocchi. About 10 minutes total.
3. Creamy Tomato Gnocchi. Simmer 1 cup of marinara with 1/4 cup of cream or half-and-half for 3 minutes, then stir in the crisped gnocchi and a handful of baby spinach until wilted.
4. Sheet Pan Gnocchi and Veggies. Toss the frozen gnocchi with broccoli florets, sliced bell pepper, 2 tablespoons of olive oil, salt and pepper. Roast at 425°F for 20 to 25 minutes, flipping once. Top with a squeeze of lemon.
5. Gnocchi Bake. Crisp the gnocchi, spread it in a baking dish, cover with 1 1/2 cups of marinara and a cup of shredded mozzarella. Bake at 400°F for 10 to 12 minutes until bubbly.
